6 Healthy Soup Recipes to Try This Winter
This winter, all we really want to do is sit near a fireplace with a hot, steaming bowl of soup. So, here we come with some healthy soup recipes to try out when it’s chilly outside.
1. Hot and Sour soup
Ingredients:
4 cups – chicken stock or broth
¼ cup – cooked and shredded chicken
½ cup – diced mushroom
¼ cup – vinegar
¼ cup – chopped bamboo shoots
3 tbsp – soy sauce
½ tbsp – garlic chili sauce
2 tbsp – corn-starch mixed with 2 tbsp of water
2 tbsp – sesame oil
Tofu diced into little cubes
2 diced onions with stalks
1 egg, beaten
A pinch of pepper
Preparation:
Bring the chicken stock to a gentle simmer in a saucepan. Add the shredded chicken, chopped mushrooms, garlic chili sauce and soy sauce to the broth. After a while of cooking, add the tofu cubes, bamboo shoots, pepper and vinegar. Slowly pour into it the corn-starch and water paste and let it simmer until the soup thickens. Beat an egg and add that to the soup as well. Put in the sesame oil and chopped onions on top and the soup will be ready. Serve it with some bread and you can turn this soup into a main course.
2. Yummy chicken soup
Ingredients:
1 whole chicken
¾ cup – vinegar
3 tbsp – parsley
1 tsp – paprika
½ tsp – salt
¼ tsp – ground pepper
2 eggs
Preparation:
Wash the chicken and place it in enough water so as to cover it. Add vinegar to the water and bring it to boil. Simmer it for about an hour or so until the chicken is tender. Once the chicken is cooked, take it out and cool it so that it doesn’t overcook due to the heat trapped inside. Do not throw away the water and vinegar mixture. That will be your broth for the soup. Strain out the broth and pour into a fresh pot. Shred the meat and add it to the broth along with paprika, parsley, salt and pepper. Separate the egg whites from the yolk and beat the whites well. Add it to the pot while gently stirring the mixture. Serve while hot.
