4. Creamy Sweet Potato Soup
Ingredients:
4 cups peeled, chopped sweet potatoes, around 4 lbs or 625g
1 cup chopped onions
1 cup chopped carrots
2 tbsp chopped coriander
1 tsp mild Indian curry paste
1 tsp ground coriander seeds
1 tsp chopped fresh ginger
1 tsp ground cumin
4 cups or 1 liter chicken stock
2 tbsp vegetable oil
1/2 cup coconut milk
2 tsp lemon juice
Freshly ground pepper
Salt
Preparation:
1. Heat oil in a pan and add onions. Sauté them until they are soft. Throw in sweet potato and carrots and sauté for 5 more minutes.
2. Add cumin, curry paste, ginger and coriander seeds and sauté for a minute. Now put in coconut milk and chicken stock and bring to boil.
3. Reduce the heat, cover and simmer for 20 minutes approximately or until the vegetables become tender.
4. Puree all contents in a food processor until smooth.
5. Add seasoning; salt and pepper. Garnish with coriander and sprinkle few drops of lemon juice.
5. Chunky Mediterranean Fish Soup
Ingredients:
1 finely sliced bulb fennel
2 finely sliced courgettes
450g defrosted hoki fillets
450ml fish stock
500g tub Napoletana (tomato and basil) pasta sauce
Handful of torn basil leaves
5 tbsp half-fat crème fraîche
1 tsp chipotle chillies in adobo sauce or chili paste
Preparation:
1. Heat stock and pasta sauce in a saucepan until they reach a boil. Simmer for 3 minutes. Now put the fennel and courgettes and simmer for 2 minutes.
2. Cut the hoki fillets into small pieces and add to the soup. Poach on low heat until the fish is cooked. Sprinkle the basil and add seasoning.
3. Mix crème fraîche and chipotle chillies in adobo sauce or chili paste and season. Your soup is ready to be served.
